- 01
Confirm coverage and scope: Check whether the products are mandatory foods under Article 62 of the Enforcement Rules of the Food Sanitation Act or a livestock products business, and decide the workplace and product groups to be certified. If preparing to export, also check the hygiene registration requirements of the importing country to set the scope of the documents.
- 02
Prepare the prerequisite program standards: Document the facility and hygiene management standards that must be in place before applying HACCP, such as the workplace, hygiene, manufacturing facilities, refrigeration and freezing equipment, water, storage and transport, testing and recall management, to suit the workplace, and set the inspection log formats.
- 03
Prepare the HACCP plan: Analyze biological, chemical and physical hazards for each product and process, and based on the process flow chart set the critical control points (CCPs), critical limits, monitoring, corrective actions and verification procedures, compiling them into the food safety management certification plan.
- 04
Training and operating records: The operator and employees complete HACCP training at a training institution and build up operating records such as hygiene inspection logs and temperature records for a period according to the prepared standards. The on-site inspection uses these records to confirm actual operation.
- 05
Apply for certification and supplement documents: For food, submit the HACCP-applied business certification application with the certification plan for each workplace to the Korea Agency of HACCP Accreditation and Services. If the documents are insufficient, a supplement request is issued, so submit the supplementary documents within the deadline.
- 06
On-site inspection and post-certification management: Correct the items pointed out in the on-site inspection and receive the certificate. To change critical control points or the business location, submit a change application, and following the notice the agency sends at least 90 days before expiry, submit the extension application at least 60 days before expiry.
