How to File a Contracted Meal Service Business Report — Facility Standards, Required Documents, and Group Meal Service Facility Outsourcing Contract
To take charge of a group meal service facility of a school, hospital or industrial workplace under a contract and cook and serve food there, you must file a contracted meal service business (contract catering) report under the Food Sanitation Act. The report is filed with the city, county or district (si/gun/gu) office having jurisdiction over the location of the place of business. You must have an independent office, refrigerated and frozen storage facilities and transport facilities, and complete the sanitation education for new business operators.
Procedure
1. Confirm the type of business
A contracted meal service business is one that concludes a contract with an institution that establishes and operates a group meal service facility and cooks and serves food at that facility. It is a different reported business type from a lunch box business that cooks at its own premises and only delivers.
2. Prepare the office and storage facilities
An independent office for business activities is required. Have a warehouse where food ingredients can be stored hygienically and refrigeration (10°C or below) and freezing (-18°C or below) facilities, and store raw materials and finished products separately.
3. Secure transport facilities
Keep at least 1 transport vehicle with a refrigerated and frozen cargo compartment, or substitute for it by concluding a transport contract with a food transport business operator. Where you use the facilities of the meal service facility you are entrusted with, this is confirmed through the contract terms.
4. Sanitation education and health examination
The business operator completes the food sanitation education for new business operators before filing the report (exempt if the operator holds a cook, dietitian or sanitarian license). Cooking staff should have their health examinations done, and if groundwater is used, prepare a disinfection device and the water quality test results.
5. File the business report with the competent city, county or district office
Attach the education completion certificate and facility materials to the business report form and submit it to the sanitation department of the city, county or district (si/gun/gu) office having jurisdiction over the location of the place of business. The business report certificate is issued after the official in charge checks the facilities.
